Ingredients

1 lb ground beef

1 medium green cabbage, chopped

1 large onion, diced

4 cloves garlic, minced

½ cup uncooked white rice

1 can (28 oz) diced tomatoes

1 can (15 oz) tomato sauce

6 cups beef broth (or vegetable broth)

2 tbsp olive oil

1 tsp smoked paprika

1 tbsp apple cider vinegar

2 bay leaves

Salt and black pepper, to taste

Fresh parsley or dill, for garnish


Instructions

1. Heat olive oil in a large pot over medium heat. Add onions and sauté until soft.

2. Stir in garlic and cook for 30 seconds, just until fragrant.

3. Add ground beef and cook until browned, breaking it apart with a spoon.

4. Season with salt, pepper, and smoked paprika.

5. Add chopped cabbage, diced tomatoes, and tomato sauce. Stir until cabbage softens slightly.

6. Pour in beef broth and stir in the rice and bay leaves.

7. Bring to a boil, then reduce heat to low. Cover and simmer for 25–30 minutes, stirring occasionally.

8. Remove bay leaves and stir in apple cider vinegar. Taste and adjust seasoning as needed.

9. Ladle into bowls, top with parsley or dill, and serve hot.

Notes

You can substitute beef with ground turkey or lentils for a lighter version.

For a vegetarian option, use vegetable broth and mushrooms instead of meat.

This soup freezes beautifully—just cool completely before storing.
