Description
This Marry Me Chicken Gnocchi Soup is creamy, flavorful, and comforting — made with tender chicken, soft gnocchi, and tangy sun-dried tomatoes simmered in a rich parmesan cream sauce.
Ingredients
1 lb chicken breast, cut into pieces
1 tbsp olive oil
2 tbsp butter
1 small onion, diced
3 garlic cloves, minced
2 tbsp tomato paste
1/2 cup sun-dried tomatoes, chopped
4 cups chicken broth
1 cup heavy cream
1/2 cup grated parmesan
1 lb potato gnocchi
1 cup spinach
Salt and pepper to taste
1/4 tsp paprika
Instructions
1. Season chicken with salt, pepper, and paprika.
2. Heat olive oil in a large pot and sear chicken until golden; remove and set aside.
3. Add butter, then sauté onions and garlic until soft and fragrant.
4. Stir in tomato paste and sun-dried tomatoes; cook for 1–2 minutes.
5. Pour in chicken broth, scraping up browned bits; simmer 10 minutes.
6. Add chicken back in and drop gnocchi into the broth; cook until they float.
7. Reduce heat, stir in heavy cream and parmesan, and simmer until thickened.
8. Add spinach and cook until wilted.
9. Taste, adjust seasoning, and serve hot with extra parmesan.
Notes
If making ahead, store soup without gnocchi and add fresh gnocchi when reheating.
For dairy-free, use coconut milk and vegan parmesan.
Soup thickens overnight — add a splash of broth to reheat.
