Description
A classic Italian pastina soup recipe made with buttery broth, Parmesan, and delicate star pasta — comfort food in its simplest form.
Ingredients
1 cup pastina (stelline or acini di pepe)
4 cups chicken broth
1 tablespoon butter
1 egg, lightly whisked
1 tablespoon olive oil
1/4 cup grated Parmesan cheese
Salt and pepper to taste
Optional: lemon zest, spinach, or shredded chicken
Instructions
1. Bring chicken broth to a boil.
2. Add pastina and cook for 5–7 minutes, stirring occasionally.
3. Lower heat and stir in butter.
4. Slowly drizzle whisked egg into broth while stirring.
5. Add Parmesan cheese and olive oil; stir until melted and silky.
6. Season with salt and pepper.
7. Serve immediately with extra Parmesan and olive oil drizzle.
Notes
Pastina continues to absorb liquid, so store it separately from broth if saving leftovers.
For a vegetarian version, use vegetable broth and skip the egg.
