Ingredients
1 whole chicken (about 3–4 lbs)
4 cloves garlic, minced
3 tbsp olive oil
2 tbsp white vinegar
2 tbsp lime juice
1 tbsp aji panca paste
1 tbsp aji amarillo paste
1 tsp cumin
1 tsp oregano
1 tsp paprika
Salt and black pepper to taste
Fresh cilantro and lime wedges for garnish
Instructions
1. Whisk together garlic, lime juice, olive oil, vinegar, cumin, oregano, paprika, and chili pastes.
2. Coat the chicken thoroughly in the marinade and refrigerate for at least 4 hours or overnight.
3. Preheat oven to 425°F (220°C) and place the chicken on a rack over a baking pan.
4. Roast for 45–55 minutes, brushing with leftover marinade halfway through.
5. Let rest for 10 minutes before slicing. Serve with green Aji Verde sauce and lime wedges.

Marinating overnight deepens the flavor.
For crispier skin, pat the chicken dry before roasting.
Use an air fryer for faster cooking (about 35 minutes at 375°F).
