A creamy, hearty Chicken Wild Rice Soup Recipe made with tender chicken, nutty rice, and cozy herbs. Comfort food for any day.
Ingredients
2 chicken breasts or thighs
1 cup wild rice
1 onion, diced
2 carrots, sliced
2 celery stalks, chopped
3 garlic cloves, minced
6 cups chicken broth
1 cup milk or half-and-half
2 tbsp butter or olive oil
1 tsp thyme
1 bay leaf
Salt & pepper to taste
Fresh parsley for garnish
Instructions
1. Melt butter in a large pot and sauté onion, carrot, and celery for 5 minutes.
2. Add garlic, thyme, and black pepper; cook for another minute.
3. Add chicken, broth, and bay leaf. Simmer for 30–35 minutes.
4. Stir in wild rice and continue cooking until rice is tender.
5. Remove chicken, shred, and return to the pot.
6. Add milk or cream and stir gently.
7. Taste, season, and garnish with parsley before serving.
Notes
To thicken: use a flour slurry or blend a small portion of soup.
For dairy-free: use coconut milk.
To freeze: omit cream and add when reheating.
