A creamy, hearty crock pot potato soup recipe made with simple ingredients and slow-cooked perfection. Ideal for cozy family dinners or meal prep.
Ingredients
6 russet potatoes, peeled and diced
1 onion, chopped
4 cups chicken broth
4 tbsp butter
1 tsp minced garlic
1 cup heavy cream
1/3 cup sour cream
1 tsp salt
1/2 tsp pepper
Optional: cheese, bacon, chives for topping
Instructions
1. Add diced potatoes, onion, butter, garlic, and broth into crock pot.
2. Stir gently to combine ingredients.
3. Cook on low for 6–8 hours or high for 3–4 hours.
4. Mash some potatoes for creaminess or use immersion blender.
5. Add cream and sour cream 30 minutes before serving.
6. Stir well and season to taste before serving.
Notes
For a thicker soup, mash more potatoes.
Reheat on low heat and avoid boiling to maintain creaminess.
Store in airtight containers for up to 4 days in the fridge.
