Ingredients
1 lb chicken breast
1 tbsp olive oil
1 small onion
2 cloves garlic
2 carrots
2 celery stalks
6 cups chicken broth
¾ cup orzo
1 lemon (juice + zest)
1 tsp oregano
2 cups spinach
Salt and pepper to taste
Instructions
1. Heat olive oil and sauté vegetables.
2. Add chicken and broth; simmer 15 minutes.
3. Remove chicken, shred, and return to pot.
4. Add orzo and cook until tender.
5. Finish with lemon, spinach, and herbs.
6. Adjust seasoning and serve warm.
Notes
Use low-sodium broth to reduce salt.
Freeze the soup without orzo for best texture.
